Barb's Pumpkin Bread with Chips and an Impromptu Tea



Last night's fall weather blew in with a chilling
45 degrees at dawn so this morning was a perfect day
to do a little baking...



The beginnings of my pumpkin bread recipe with some new thriftshop white ironstone finds.


It all began with a quick Instagram photo spelling out
some ingredients ~ sugar, honey, eggs, pumpkin ~ then
asking "What am I making?"

Well, to warm up our little prairie home I thought baking
something pumpkin would be perfect.

Here's my own recipe adapted from
a recipe I wrote down years ago at a friend
Theresa Williams' tea.
I've added the applesauce and honey and whole wheat flour
to reduce the white sugar {normally 3 cups!}
and increase the fiber.

Pecans, chocolate and cinnamon chips
are my addition, too.

Barb's Pumpkin Chocolate and Cinnamon Chips Bread with Pecans


Ingredients

1 c. whole wheat flour
2 1/3 c. flour
2 tsp. baking soda
1 1/2 tsp. salt
1/2 tsp. cinnamon
1 tsp. nutmeg
1 1/2 c. sugar
1/3 c. water
1/3 c. melted honey
1/2 c. applesauce
1/2 c. vegetable oil
4 eggs
2 cups canned pumpkin
1 c. chocolate chips, mixed
{use: 1/2 c. Ghirardelli dark chocolate chips, 1/2 c. Hershey's milk chocolate chips}
1/2 c. cinnamon chips
1/2 c. to 1 c. chopped pecans


Directions

Grease several loaf pans of your choosing.*

Sift together dry ingredients including sugar.
Make a well in the center and add the rest of the
ingredients including nuts and chips.
Mix well until smooth.

*Divide into 4 small loaf pans and any leftover
batter into more pans as needed.
{my batch today made 1 large loaf and two small loaves}


Bake at 350 degrees for 1 hour checking smaller
pans at 45 minutes, testing if done.
If a cake tester or knife comes out clean with no
sticky pumpkin on it then the loaf is done.
Cool on a wire rack for 10 min. or so before devouring.
This bread freezes well when wrapped
tightly in plastic wrap.

Yum!!!


While the breads were baking in the toasty warm oven
Mr. Yoda and I headed out for our morning walk...
Returning back to our now warm trailer home, the
heavenly scent wafting out of the open windows of
baked pumpkin and the ooey-chewy goodness
of melted chocolate and cinnamon
just made our mouths water.
;)'

The sun made us squint! :)


My friend Peggy rolled up on her scooter as I
was pulling the last two pumpkin breads
out of the oven and said that she had seen my Instagram post
which I had also posted over to Facebook and
thought she'd come find out
what I was baking.

How exciting!!!
So we had an impromptu tea party alfresco
at the new "tea table," aka the garden patio table,
found this past weekend at Lowe's ~ 
a steal at $25!!!

Lowe's had a number of umbrellas and about six
of these tables on clearance so I asked the manager
"How much do you want to sell it for?"
She said 75% off.
"Sold!"

I already had my big teacup ready for a piece of the bread when it would be ready, so I put on some more water to boil...
Gathering napkins, two small floral plates
and another tea mug
all went outdoors to prepare the table.
Lastly, I brought out the vintage carnival glass cake plate
with the best baked of the small pumpkin loaves
atop it...
